Oy, Oysters had its humble beginnings in a quest for knowledge and a shared passion for seafood. The owners, Luke Nguyen and Tracy Rosas, whose backgrounds were in accounting and marketing, embarked on this culinary journey out of a desire to create something unique and exceptional.

Eventually, the eatery’s founders were led to Carlsbad Aquafarm, an oyster farm in Carlsbad, California. It was on a date when they stumbled upon a tour that provided an in-depth insight into the growth and life of oysters. This experience was a turning point for them, sparking a deep-rooted fascination with oysters and the seafood industry. It was during this visit that the concept for Oy, Oysters was born.

Since opening, Oy, Oysters has achieved several proud moments. One notable accomplishment is the introduction of over 40 different oyster varieties to their menu. Additionally, they have crafted a lobster roll that stands out from the rest, offering a unique twist on this classic dish. Another highlight is their all-uni pasta, which is prepared without any uni oil, powder, or preservatives, highlighting their commitment to using only the freshest ingredients.
